Ayam Masak Lemak Cili Padi

This is my all time favourite dish! I can eat it everyday and go fat, no, not fat - OBESE! Yes, this is a fatty Malaysian dish, very high in cholesterol so I would only serve it once in a while.

In english its called spicy chicken in coconut gravy. Depending on your tastebuds, you can add more or less chillies if you wish InshaAllah.

Ingredients

+    2 kg Thigh chicken (with bones)

+    1 Lemongrass

+    5 Kaffir lime leaves

+    1 tin coconut milk

+    Salt + vegeta (vegetable stock) to taste

+    1tbls of shrimp paste (optional)

+     Potatoes

To blend until fine:

+    Dried small prawn (I just grab a bunch of it in my fist)

+    7 Candlenuts

+    2 Red onions

+    5 Clove garlic

+    4cm Ginger

+    2 tspn Turmeric powder

+    5-8 Cili padi (small red chillies-warning: they are very spicy)

Method

  • Marinate chicken thigh with ginger, garlic, turmeric, salt, chilli powder for at least 30 minutes
  • Heat up oil and fry the marinated chicken thigh. Only fry till it is half cook and leave aside to cool.
  • Using the same oil, fry the blended ingredients
  • Bruise the lemongrass and chuck it in the pot
  • Add the kaffir lime leaves, turmeric powder and stir
  • Add the fried chicken, potatoes, coconute milk, water.
  • Cook for another 15 minutes and keep stirring to evenly spread the gravy all over the chicken.
  • Add the salt and vegetable stock
  • Simmer over low heat for 5 minutes
