Beef Rendang

I learnt this recipe from my step mother. MashaAllah she is the best cook! I just love the thought of going to her house and there would always be food on the table and in the freezer (as spares for me to take home lol).
I’ve made beef rendang on many occasions but always failed. However, this recipe is easy although there are many steps involved. My first attempt was kinda OK, at least it tasted better than the other rendangs I made. InshaAllah with practice, I hope to master this recipe!
Ingredients (For a large serving)
+ Beef 2kg
+ Brown sugar
+ Tamarind concentrate (1 bottle)
+ 2 tin coconut milk
+ 4 tbls Desiccated coconut (fry until brown-do not burn)
+ 1 Cinnamon stick
+ 2 cloves
+ 2 cardamom
To dry fry together:
+ 5 tbls coriander seeds
+ 2 tbls Cummin seeds
+ 3 tbls Fennel seeds
Once dry fried the above ingredients, blend them with these:
+ 8-9 Candlenuts
+ 4 Onions
+ 2 tsp Black pepper seeds
+ Dried chilli (small about 10-15 depending on your taste buds)
+ 6 Lemongrass
+ Thumbsize ginger
+ Thumbsize galangal
Method
- Marinate the beef with tamarind, brown sugar, 1 coconut milk and set aside for 30 minutes
- Fry 2 sliced onions, cinnamon stick, cardamom, cloves
- When it starts to fragrant, add the beef, 1 coconut milk and cook for one and half hours, stirring.
- Add you potatoes if desired and cook for another 15 minutes
- Add the fried desiccated coconut
- Salt to taste
