Ingredients

+  500g Hokkien noodles
+  500g Bean sprouts

For the sauce:
+   500g Sweet potato (boil and mash in blender)
+   250g Chicken breast or Beef (boil)
+   Oil for sautéing
+   Salt and sugar to taste

To blend:
+   3 tbls Soy bean paste
+   4 tbls Baba’s meat curry powder (or any curry powder of your choice)
+   6 clove garlic
+   10 small red onions (or 3 medium-big red onions)
+   1inch galangal
+   2inch ginger
+   2 lemongrass
+   2 tbls dried small prawns (to be washed first)

Ingredients to sprinkle when serving:
+   Boiled egg, half lime, sliced green chillies, spring onions and fried onions

Method

  • Heat up oil and saute the blended ingredients.
  • Add the stock from your chicken or beef into the pot
  • Add your mashed sweet potato, salt and a little sugar
  • In a separate bowl, pour hot water over the hokkien noodles to soften for a few minutes. Do the same for the bean sprouts too.
  • When you are about to serve, put a serving of noodles into a bowl and pour the gravy over it. Add all the ingredients to sprinkle on top.
  • Best eaten when hot

    this sounds delish mashaAllah. where do you buy those ingredients from? the dried prawns, galangal and soy bean paste

  2. Nessrin, this is one of my favourites. In fact, I was going to make it today but didnt have the ingredients . You can buy all asian products/produce at Preston asian grocer, where the market is. There are 4 different grocers around there…there is a huge new one in red, surely cant be missed. But I usually got to “Dong Thin” (I think thats how its spelled)
