Tiramisu

Assalamualaikum,

I’m not usually a fan of coffee, but this one, I simply cannot resist. Absolutely delicious and very  light too. A friend of mine gave me this recipe and I have made it on numerous occasion because my husband loves it!

To make the tiramisu in a square dish approximately 20cmx20cm you will need;

Ingredients

+    Sponge Finger Biscuits

+    1 1/2 cups boiled water

+    2 tbl instant coffee granules

+    1/4 cup caster sugar

+    2 Egg yolks

+    250g tub mascarpone cheese (Make sure it is Halal certified)

+    150ml whipped cream

+    Grated chocolate (Cadbury Flake bar or dark cocoa powder)

Method

  • Combine the coffee with the boiled water and allow to cool slightly so it’s not too hot to handle.
  • Mix the sugar with the egg yolks until light and creamy. Add 1/8 cup of the coffee mixture and the   mascarpone. Mix for a few seconds until combined.
  • Dip biscuits into coffee mixture and line base of dish. Cover with half the mascarpone mixture. Put a second layer of dipped biscuits on top and cover with the remaining mascarpone. Put a final layer of dipped biscuits on top and cover with the whipped cream.
  • Sprinkle grated chocolate on top of the cream.

Note: You must allow this to sit for a few hours before eating, as it needs more time to soak up the ingredients and soften.
