Strawberry Cheesecake

I’ve made this a few times and now I dont even bother walking into the cheesecake shop anymore because mine taste way better lol Alhamdulilla.
Ingredients
+ 125g Wheatmeat biscuit, crushed
+ 2 tbsp Ground hazelnut
+ 90g Unsalted butter, melted
+ 3 tbsp Strawberry jam
+ 500g Cream cheese (fresh in tub)
+ 4 tbsp Lemon zest, finely grated
+ 3 Whole eggs
+ 2/3 cup Caster sugar
+ 250g Strawberries
+ 125g Raspberries
+ 1 quantity Coulis (see recipe below)
To make Coulis:
+ Juice of 1/2 a lemon
+ 125g Strawberries
+ 125g Raspberries
+ 1/2 cup caster sugar
Method for Cheesecake
- Preheat oven to 160c (325F)
- Prepare your pan (205 mm in diameter and 65mm high) by lining the base and sides with baking paper
- Mix together biscuits, hazelnuts and 1 tablespoon of sugar
- Add melted butter to biscuit mixture and stir to combine
- Press mixture into base or prepared pan and refrigerate until firm
- Once refrigerated, spread 3 tablespoon of strawberry jam evenly onto base and set aside
- Using an electric mixer beat cream cheese with the remaining caster sugar and lemon rind until soft
- Add the eggs one by one, mix well after each addition. Pour mixture onto biscuit base
- Bake for 25 minutes
- Allow cake to cool, then refrigerate overnight until set
- Remove from pan and decorate with strawberries and raspberries.
- Pour coulis over cheesecake before serving
Method for Coulis (this is made the following day once the cheesecake is set)
- Blend all ingredients until smooth and sugar crystals have dissolved
- Strain sauce through coarse sieve to remove seeds
