Mango Pudding

Ingredients
+ 1 Mango (ripe and sweet)
+ 1 packet Gelatine (’Davis’ Gelatine is Halal)
+ 1.5 cup Caster Sugar
+ 1 cup Fresh Milk (to blend)
+ 1 cup Fresh Milk (to mix)
+ 1.5 cup Water (to boil)
To garnish:
+ Strawberries
+ Kiwi
Method
- Cut the mangoes and blend them fresh milk to form mango puree.
- In a small pot, mix gelatine & caster sugar in hot water, stir constantly to form a clear gelatine syrup.
- In a bowl, beat egg yolks, gradually mix in the other cup of fresh milk, add the gelatine syrup & mango puree, mix well and pour into jelly moulds.
- Chill until set, at least 8 hours.
