Roasted Capsicum Dip

Ingredients
+ 1 whole red capsicum
+ Olive Oil
+ Feta cheese (150grms)
+ 1.5cup sour cream or yoghurt
+ 1/2 tsp chilli paste
+ Squeeze of lemon juice
Method
- Cut the capsicum into four parts. Leave the skin on.
- Brush some oil on the outside of the capsicum, place on a tray skin side up and place in the oven. Cook until capsicum becomes soft and the skin goes black.
- Take the capsicum out of the oven, allow it to cool for a few moments, then peel the skin off.
- Place the capsicum in a blender, and blend through until it breaks apart into small pieces.
- Add the rest of the ingredients, and blend through until they’re all combined and at a good enough texture for a dip. I made mine very smooth because my husband likes it that way.
- Place in a bowl and refrigerate.
