Mini Round Lamingtons

Australia’s all time favourite! Soft and light.

They are usually square but this time I decided to make them into mini balls.

Ingredients:

+     100g butter, melted
+     1/2 teaspoon vanilla extract
+     2 eggs
+     2 tbls milk
+     2 cup desiccated coconut
+     1/3 cup caster sugar
+     1 cup self-raising flour

Chocolate icing:
+     30g butter
+     1/2 cup milk
+     1/4 cup dark cocoa powder
+     2 cups icing sugar

Method:

Preheat oven to 180degrees fan forced. Line small12 muffin pan with muffin cases.

Add the butter, vanilla extract, eggs, caster sugar, flour and milk in small bowl and mix with an electric mixer. Beat until combine for about 5 minutes.

Once mixture is mixed, pour into the muffin cases and bake for 15 minutes.

When done, remove from oven to cool.

To make chocolate icing:

In a bowl placed over a pot with boiling water, add butter, milk, cocoa powder and icing sugar. Combined until mixture becomes a bit thick (not watery).

When lamingtons are cooled, remove from the cases and dip the cakes in the chocolate icing and then into the desiccated coconut.
