Ingredients
To eat with:
* Rice cakes/rice cubes
To blend:
* 1 large Onion
* 3 clove Garlic
* 1/2inch Ginger
* 1 inch Galangal
* 1 inch fresh Turmeric
* 10-15 small dried prawns
* salt to taste
For the sauce:
* 1 tin coconut milk
* Long green beans
* Cabbage (thinly cut)
* Carrots (thinly sliced)
* Vermicelli rice noodles
* Tofu slices or tofu puff
To garnish:
* Dry fried onions/shallots
* Spring onions (thinly sliced)
Method for sauce
* Cook the blended ingredients until oil arises.
* Add coconut milk and cook for 30 minutes, stirring.
* Add vegetables, tofu, vermicelli noodles, salt and cook on slow for 15 minutes.
* Served with rice cubes and topped with garnishing ingredients.
Method for rice cubes
* 3 cups rice, 6 cups water and cook in a rice cooker with a pinch of salt.
* Once cooked, pour into a rectangular dish tray and press the rice firmly. Brush with some oil.
* Leave to cool for an hour and then transfer into the refrigerator.
* Best left overnight or at least 4 hours to harden.
